The Rising Dough Mystery - Chemistry Detective Activity | Fermentation, Baking

Description

Turn your students into science detectives with this NO PREP, engaging, real-world investigation focused on fermentation, gas production, and baking science. In this case file activity, students analyze dough observations, examine yeast activity, interpret gas formation evidence, evaluate temperature effects, rank possible causes, and build a scientific case to solve the mystery of what makes bread expand in the oven.

Instead of passively reading about fermentation and baking processes, students actively investigate, analyze patterns, and reason through the evidence to uncover how yeast produces gas and how heat causes that gas to expand. This activity makes chemistry and everyday cooking interactive, engaging, and easy to understand while strengthening critical thinking and literacy skills.

✅ NO PREP, no formatting, no issues. Simply download and go. Includes all instructions, answer key, rubric, and background reading students need to solve the case. This mystery is included inside my Chemistry in Everyday Life Mystery Activity Bundle.

10-Part Activity Breakdown

Part 1 – Mission Briefing:
Students are introduced to a case involving bread dough that expands during baking and behaves differently under various conditions.

Part 2 – Background Reading:
Students build foundational knowledge about fermentation, yeast activity, gas production, and how heat affects particle movement and expansion.

Part 3 – Evidence Log:
Students examine 10 detailed evidence cards related to yeast vs no yeast dough, gas bubbles, sugar use, temperature effects, repeated trials, and final bread texture.

Part 4 – Suspect Ranking:
Students rank possible causes of dough rising (yeast producing carbon dioxide, heat expanding gases, sugar feeding yeast, trapped gas in dough, ingredient interactions) and justify their reasoning using scientific evidence.

Part 5 – Pathway Tracking:
Students trace how yeast + sugar → gas production → gas trapped in dough → heat causes expansion → dough rises.

Part 6 – Impact Analysis:
Students analyze how gas formation and heat affect the structure and texture of dough and baked bread.

Part 7 – The Big Question:
Students explain what makes bread expand in the oven using evidence from the case.

Part 8 – CER Writing:
Students construct a scientific argument using Claim–Evidence–Reasoning.

Part 9 – Solutions & Action Plan:
Students propose ways to improve dough rising by adjusting temperature, ingredients, and conditions.

Part 10 – Reflection:
Students reflect on how scientific processes explain everyday cooking outcomes.

What Students Will Learn

  • What fermentation is and how it produces gas
  • The role of yeast in breaking down sugar
  • How carbon dioxide gas forms in dough
  • Why gas bubbles cause dough to expand
  • How temperature affects yeast activity
  • How heat causes gas to expand during baking
  • Why dough structure allows gas to be trapped
  • How ingredients like sugar affect yeast performance
  • How to use Claim–Evidence–Reasoning (CER) to explain scientific processes
  • How science explains everyday cooking and baking

This activity blends chemistry, physical science, environmental science, critical thinking, and literacy skills into one high-interest, structured lesson that keeps students thinking like real-world scientific investigators.
